Description

Les Oliveraies du Cadé et des Ribes produces a natural, extra virgin olive oil made from the first cold pressing. As a local producer, Lydie Caranta cultivates her olive trees according to the principles of sustainable arboriculture (without pesticides).
To produce a mild and fruity oil, eight varieties native to the Var region are cultivated: - Le Pardiguier, an iconic variety from Cotignac, whose blossoming trees resemble bouquets of yellow flowers. The resulting oil is mild, with a distinctive and complex fruitiness. - Cayon: native to the Var region, this variety is highly prized for its role in pollinating other olive varieties. It produces a mild oil with a ripe, light, and harmonious fruitiness, dominated by aromas of tomato, apple, and almond. - Petit Ribier: native to Callas, it is known in this town only by its “real” name: the “plant de Callas.” It is a very old variety with an intense fruitiness. The Petit Ribier is also renowned for its resistance to aging. It is a highly prized and sought-after product. - Cayet Roux: a hardy variety from central Var, also known as the “Figanières plant.” The oil produced was once reserved exclusively for local dignitaries. Its mild oil features aromas of apple, greenery, and hay. - Picholine: A variety from southern France. A very fruity, green, and tangy oil. It features fruity notes (apple and pear) and herbaceous notes of hay. - Bouteillan: a variety from the Bouches-du-Rhône and Var regions. An olive oil blended with other regional varieties, featuring intense, herbaceous aromas. - Salonenque: native to Provence. An oil with aromas of artichoke, hazelnut, and apple. It has very pronounced vegetal notes. AOP and AOC designations from Les Baux-de-Provence and Aix-en-Provence. - Cayanne: native to the Var region. The oil produced is prized for its mildness and creaminess.
